Self confessed biology nerd and self-taught foodie, Josefine is a talented young recipe developer and food photographer based in Denmark. Her passion for vegetarian wholefoods inspired her to launch her delightful blog Sprouted Fig, where she focuses on healthy refined-sugar free recipes.
With a dream to study medicine or nutrition, Josefine loves absorbing knowledge on how the human body processes different foods and how to ensure it runs at optimum levels. She’s a keen runner, big fan of Autumn, and currently planning her first big overseas adventure.
My dream is to open my own little whole foods cafe in central Copenhagen or London with big windows, plants growing everywhere and the loveliest music playing all day long.

Favourite place to visit
The southern part of France will always have a special place in my heart and I dream of one day living in London.
In the meantime, my next big adventure will be travelling Australia and New Zealand – two countries I’ve been dreaming about visiting forever.
